This is a all time favorite at my house even my little will devour it !!!!
INGREDIENTS:
1 1/2 lb flank steak (sliced against the grain )
4 medium zucchini
2 tbsp olive oil
4 minced garlic cloves
2 tbsp butter
1 lemon (juice &zest)
1/4 c low sodium chicken broth
1/4 c chopped parsley
1/4 teaspoon crushed red pepper flakes (optional)
Salt and pepper
STEAK MARINADE:
1/3 c low sodium soy sauce
1/4c lemon juice
1/2 c olive oil
1 tbsp Sriracha sauce or hot chili (optional)
Directions
Marinade sliced flank steak for 30 mins
Wash &trim zucchini using a spiralizer make zucchini noodles
Heat oil in large skillet over medium high heat
Add the steak single layer and season with salt and pepper (keep the marinade for later )
Add garlic after about 3 or 4 mins remove the steak and set aside in a bowl
Same skillet Add butter lemon juice and zest, red pepper flakes , chicken broth And remaining marinade bring to a simmer all to reduce for 2-3 mins stir regularly
Stir in parsley, zoodles cook for few mins to render down then add the steak ! Serving about 4 people
***Zucchini noodles tend to make alot of water after spiraling i sprinkle with salt and let them sit for a few mins rinse and drain them before cooking
